Turşu deyince Çubuk Türk Patent Enstitüsü Marka Daire Başkanlığının resmi gazetede yayımlanan kararına göre, Çubuk Belediyesinin başvurması üstüne çubuk turşusu coğrafi marka adını almıştır. Artık Çubuk markası ile satılacak Çubuk Turşuları, Çubuk Belediyesin’den belirlenen standartlar oranında izin alması gerekmektedir. TPE’nin kararına yönelik, çubuk turşusunun ürün tanıtımı, “Çubuğun ilçe ve köylerinde organik tarım şeklinde yetiştirilen (salatalık, domates, patlıcan, kelek, fasulye, acur, havuç, sivri biber, biberiye, lahana gibi) ve sıkı dokularından ötürü körpe şekilde toplanan sebzelerin, eskiden beri yöreye özgü yapılış usulü ile hazırlanmasından ibaret bir turşu çeşididir ” diye açıklandı. Çubuk turşusunun bilinen geleneksel özelliği ise defne yaprağının ve dere otunun kullanılarak oldukça düşük oranda sirke ile yapılması, ev yapımı turşu tadında ve uzun ömürlü (en çok 2 yıl) olması şeklinde tanımlandı.

Peki Çubuk Turşusu Nasıl Yapılır? Malzemeler: 1,5 kilo küçük salatalık, 1 çay bardağı üzüm sirkesi, 1 çay bardağı kaya tuzu, yarım çay kaşığı limon tuzu, 5 – 6 tane karabiber, 2 tane defne yaprağı, 5 diş kadar sarımsak, bir tutam dereotu ve sapı, Çubuk’un kuyu suyu ve en önemlisi Çubuk’un doğal havası olması şart sonrasında biz sorumlu değiliz. Yapılışı malzeme listesinden ardından artık turşumuzu kuralım, salatalıkların bir kaç yerine delik açıyoruz ve kavanoza muntazam bir biçimde yerleştiriyoruz. İlk sırayı döşedik, kabuğunu soyduğumuz ve üzerini hafifçe ezilen sarımsakların yarısı ilave edilir. Limon tuzunun da yarısını katıyoruz, tane karabiberin yarısını da ekliyoruz. Özelikle kalın saplı dereotunun kokusu nedeni ile kullanılmasını öneriyoruz. Kokusunun çıkması için defne yaprağının kenarlarını keserek ekliyoruz ve çok fazla defne yaprağı kullanmıyoruz. Yalnızca 2 yaprak yeterli olacak ve kaya tuzumuzun yarısını koyuyoruz. Üzerine bir daha salatalıkları dizmeye devam ediyoruz, sonra da kalan malzemelerimizi limon tuzu, tuz, defne yaprağı, karabiber, sapları ile beraber dereotunu da ekliyoruz. Bölgenin suyu fazla sert ve çok mineralli olduğu için Çubuk turşusunun lezzetini içinde saklıyor.
İçindeki sır değil, doğallık ve sevgi
Bununla beraber Çubuk turşularının özelliklerinden biri de yörede özel olarak yetişen sebzelerin kullanılması sirkeyi de bırakıyoruz. Son olarak akşamdan kaynatıp soğutulan suyu ilave ediyoruz. Bu su eksilebilir, 2-3 günde bir sirke desteği yapabiliriz, şimdi kapağını sıkıca kapatarak 3 hafta bekliyoruz. 3 hafta ardından çubuk turşumuz ağır ağır lezzetine kavuşacaktır. Ardından kapağını açıyoruz hiç bir bozulma yok, gördüğünüz gibi tazeliğini saklayabiliyor. Bir kaç tane alıp isterseniz bir de içerisine bakabilirsiniz, bilhassa kuru fasulyenin yanında çok uygun bir garnitür göreceksiniz. Kısaca Çubuk Turşusunu merak edenler Türk Patent Enstitüsü kararıyla tescilli Coğrafi İşaretli ürünümüz, lezzetimiz Çubuk Turşusu, Çubuk’ta organik tarım usulü ile yetiştirilen salatalık, domates, patlıcan, kelek, fasulye, acur, havuç, sivri biber, biberiye, lahana ve daha birçok sebzeden yapılıyor. Çubuk Turşusu, sıkı dokularından dolayı körpe halde toplanan sebzelerin, eskiden beri yöreye has yapılış usulü ile hazırlanmasından dolayı nesilden nesile aktarılan bir mirastır. Bilinen en geleneksel özelliği ise defne yaprağı ile dereotu kullanılarak oldukça düşük oranda sirke ile yapılmasıdır. Aynı zamanda ev yapımı turşu tadında ve uzun ömürlüdür. Her derde deva Çubuk Turşusu, bağışıklığı güçlendirir, kan şekerini dengeler, kalp damar hastalıklarına ve soğuk algınlığına karşı korur. Merak edilenler arasındadır.
ÇUBUK TURŞUSU SAKLAMA KOŞULLARI KULLANMA TALİMATI
Sağlıklı tüketim ve kullanma talimatı için içeriği dikkatli okuyunuz. Çubuk Turşusunu karanlık, serin bir yerde muhafaza ediniz. Şayet yoksa buzdolabına koyabilirsiniz. Sıcak, güneşli ortama koymayınız. Açtıktan sonra 1-2 ay içinde tüketiniz. Turşunun kapağını açtıktan sonra tekrar ağzını sıkı bir şekilde kapatınız. Küçük kavanozlara alabilirsiniz. Suyu doğaldır, içebilir. Koruyucu katkı maddesi kullanılmayan turşu, canlı probiyotik mikroorganizma sayesinde fermente olmaya devam eder. Turşu, kapağının açılıp kapanması sırasında hava alır, dolayısıyla turşu ve suyu üzerinde renk değişimi meydana gelebilir. Açık kalan veya hava boşluğu sonrasında turşuda (beyazlanma, barlanma) olabilir bu gayet doğal bir olay üzerindeki tabakayı alıp tüketmeye devam edin. Turşu, uzun süre susuz kalırsa rengini, tadını ve özelliğini yitirir. Bozulmuş turşu; yumuşak, rengi mat ve tadı mayhoş olur. Çubuk Turşusu, patent ve coğrafi işaret belgesi ile tescillidir.
