İç Anadolu bölgesinde başkent Ankara’nın kuzey ilçeleri arasında olan Çubuk’ta meşhur Çubuk Turşusu’nun yapımında kullanılan halk arasında yeşil altın olarak bilinen salatalığın bu yılki rekoltesi ve erken başlayan hasadı üreticiyi sevindirdi.
Aşağı Çavundur Mahallesi’nde salatalık tarlalarını ziyaret eden Belediye Başkanı Baki Demirbaş, yaptığı açıklamada; “İlçemizde salatalıklara “yeşil altın” ismi verildi. Coğrafi işaretli ürünümüz, Çubuk turşumuzun ana maddesi salatalıklarımızın hasat dönemi başladı. Tabii bu sene havaların sıcak gitmesi vesilesiyle ürünlerimiz bir hafta önce çıkmaya başladı. Bu seneki rekolte, geçen yıllara göre çok daha artmış durumda. Bu da son derece bizi ve üreticilerimizi sevindirdi. Her geçen yıl pazar payımız gerek ülkemizde gerekse yurt dışında artmaya devam ediyor. Çubuk turşumuzun ham maddesi salatalığımızın ana özelliği toros tipi salatalıktan ev böyle kalem gibi küçük boylu açık renkli ve kendine özgü kokusu olmasıdır. İşte kendi topraklarımızda, kendi kaynak sularımızda ürettiğimiz Çubuk turşusunun çok lezzetli olması bundan kaynaklıdır. Salatalık gerçekten ilçemizin markası haline gelmiştir.’”
Çubuk Ziraat Odası Başkanı Orhan Gülle de “İlçemizin en büyük ekonomik girdilerinden birisi olan salatalığın hasadına başkanımızın katılımıyla başladık. Çiftçimize destek ve imkan verildiğinde üretmek için elinden geleni gösteriyor. Bu sıcakta çiftçilerimiz arazide çalışıyor. Ellerinden geldiği kadar Türkiye ekonomisine, ilçemizin ekonomisine faydalı olmaya çalışıyor.” diye konuştu.
Oluşturdukları iki ekiple salatalık üreticine destek olduklarını dile getiren İlçe Tarım ve Orman Müdürü Adnan Dumrul ise, “Her gün iki ekibimiz hem hastalığını hem de kontrollerini sağlamak için sahada bulunuyor. Özellikle köylerden gelen sebzelerin hastalığı gibi ihbarları hızlı bir şekilde değerlendiriyoruz. Onun dışında ürünleri kontrol ediyoruz” ifadesini kullandı.
HASAT İLE BİRLİKTE TAZE TOPLANAN SALATALIKLAR AYNI ANDA TURŞU OLMAK ÜZERE KURULUYOR
Çubuk’ta Nisan aylarında ekilen salatalıklar 3 aylık bir süre sonunda hasada hazır hale geliyor. Coğrafi işarete sahip olan Çubuk turşusu için yerinde yetiştirilmesi gereken salatalıklar, organiğe en yakın şekilde üretiliyor. Hasadın ardından ev ya da tesislere getirilen salatalıklar önce elek makinesinden geçirilerek 0, 1, 2 ve 3 olarak adlandırılan boyutlara göre ayrılıyor. Küçükten büyüğe göre kasalara doldurulan salatalıkların sonraki durağı hijyenik temizleme, yıkama ve fırçalama makinesi yapılıyor. Suyunu içine çekmesi için gerekli olan iğneleme fıçı ya da tenekeye konarak içerisine atılan malzemelerden sonra kurulum aşamasına geçiliyor. Bütün bu işlemlerin ardından salatalıkların 1 ay boyunca bekleyecekleri tenekenin kurulum aşaması başlıyor. Burada turşunun en önemli malzemelerinden biri olan Çubuk’un temiz kendine has kuzey temiz havası, doğal yer altı kaynak suyu, sarımsak, defneyaprağı, acı biber ve tadına en önemli katkıyı sağlayan çiçekli dereotu, salatalıklarla beraber koyuluyor. Ardından içinde 2 yıl öncesinden alınıp bekletilen üzüm sirkesi ve tuz olan suyu tenekeye aktarılarak bir gün boyunca fermente olması için ağzı açık şekilde bırakılıyor.
Turşular yola çıkmadan önce gıda teknikerleri tarafından, turşuların Türk Gıda Kodeksi Yönetmeliğine uygun olup olmadığının kontrol edildiği test aşamasından da geçiyor. Burada önce coğrafi işaret belgesi denetiminden geçen turşular daha sonra tuz tayini, asetik tayini ve pH tayinine tabi tutuluyor.
Yaklaşık 4 bin hektarlık alanda yapılan salatalık ekiminde bu yıl önemli bir rekolte elde edildiğini dile getiren üreticiler, herkes lezzetli turşu almaya, taze sebze almaya ilçelerine beklediklerini belirtti.
Bunun üzerine tüketim aşamasında herhangi bir sorunun olmadığının anlaşılmasının ardından turşular isteyene ve turşu severlerin kapısına kadar anlaşmalı kargo ile gönderiliyor.
