Bugün çevre köylerde ve Çubuk merkezinde pek çok aile turşuculukla geçimini sağlamaktadır. Çubuk turşusu önceleri yalnız Ankara piyasasında alıcı bulurken bugün tüm yurttan talep almaktadır.
Turşunun yapımı şöyledir: önce yörede yetiştirilen salatalıklar eleklerden geçirilerek çeşitli boylara ayrılır ve 0, 1, 2, 3 diye numaralandırılır. Turşuya sarımsak, defne yaprağı, karabiber, dereotu, sirke ilavesiyle istenilen sebzeler koyulur. Turşu teneke kutulara, cam ve pet kavanozlara kurulur. Önceleri yalnız salatalık turşusu yapılırken bugün armut, kırmızı pancar, yumurta, kelek, kelem biber, içi doldurulmuş domates, patlıcan ve fasulye gibi bir çok ürünlerden de yapılmaktadır. Çubuk turşuların da doğal olmayan katkı maddesi bulunmaması lezzetini ve dolayısıyla ününü artırmaktadır.
Çubuk belediyesi de ilçe ekonomisine katkısı olan ve halkı bir ürüne sahip olan turşuyu ve bölgede yetişen başka ürünleri tanıtmak için herkes elinden geleni yapmaktadır.
Turşu ile ilgili çok değişik bilimsel ve akademik tanımlar bulabilirsiniz. Ama en yakın hali ile sebze ve meyvelerin tuz ve sirke karışımı olan salamurada fermente edilmesi, yani bir tür mayalanması işlemidir.
Peki neden böyle bir işleme ihtiyaç duyulmuştur? Turşuluk sebze ve meyveler yılın belli aylarında yetişen (genellikle yaz ve sonbahar dönemlerinde yetişen) ürünlerdir. Sebze ve meyveleri yetişmediği dönemlerde de tüketebilmek için onların bu dönemlere kadar saklanıp bu dönemlere kadar korunabilmesi gerekmektedir. İşte bu koruma yöntemlerinden biriside fermente yöntemidir. Konserve yapmak (Isıl İşlem uygulamak), dondurmak uygulanan diğer yöntemlerdendir.
Turşu, neredeyse tüm dünya mutfaklarında vazgeçilmez bir yer tutar. Avrupa’dan, Amerika’ya, Uzak Doğu’ya her kültürün kendi lezzetleriyle şekillenmiş kendine özgü turşu tarifleri vardır. Ülkemizin zengin yemek kültüründe de turşunun ayrı bir yeri bulunur, hemen hemen her sebzenin ve meyvenin turşusuna rastlamak mümkündür. Pazarların, mahalle çarşılarının renkli vitrinleriyle ağız sulandıran turşucuları da kültürümüzün lezzetli bir parçasıdır. Geçmişten günümüze adı ve lezzeti değişmeyen lezzeti, halen tüketiciler aynı tadıyor
Turşunun MÖ 2000’li yıllardan beri yapıldığı bilinmektedir, yiyecekleri saklamanın en verimli yollarından biri olan turşunun Türk mutfağındaki yeri Osmanlı Devleti’n den bile önceye dayanmaktadır. Türkler Anadolu’ya geldikten sonra, klasik öğünleri olan et yahnisi, pilav ve ekmek gibi yemeklerin yanına turşuyu da eklemiş, özellikle davet sofralarında bu lezzete yer vermişlerdir. Osmanlı Sarayı’n da ise mutfakta çalışan özel turşuculara yer verilmiş, birçok sebze ve meyveden turşu yapılmıştır. En çok da hardal tohumu kullanarak yapılan üzüm turşusu Osmanlı’nın klasik lezzetleri arasına girmiştir. Osmanlı’dan sonra çeşitler biraz değişse de turşunun Türk mutfağındaki önemi değişmemiş ve turşu sofraların değişmez lezzetleri arasında kalmıştır. Birçok Türk yemeği için mükemmel bir eşlikçi olması ve soğuk algınlığı, grip gibi hastalıklara iyi gelip, bağışıklığı güçlendirmesi turşuyu vazgeçilmez kılmıştır.
Türk mutfağının en lezzetli, en meşhur turşu çeşitlerinden biri Çubuk turşusudur. Adını şeklinden değil yapıldığı yerden alır, bu leziz turşunun adresi Ankara’nın Çubuk ilçesidir. Doğum yeri gerekli patent ile resmileştirilmiştir yani sadece Çubuk ilçesinde üretilen turşulara Çubuk turşusu denilebilir.
Şanına yakışır bir Çubuk turşusunu yapmak için dikkat edilmesi gereken birçok püf nokta bulunsa da, bu özel tarife has malzemeler arasında sarımsak, dereotu ve defne yaprağı bulunur. Bu malzemeler Çubuk turşusuna başka turşularda bulamayacağınız o eşsiz aromayı verir.
Turşunun yapımında maden suyu kullanımının da büyük önemi olduğu söylenir. Bunun sebebi Ankara Çubuk bölgesinin sularının sert ve mineralli olmasıdır. Çubuk turşusunun bir başka değişmez malzemesi ise sirke dir.

Aslında ülkemizde her ustanın turşu yaparken kullandığı malzemeler farklıdır, turşucuların ürünleri arasındaki farkı sağlayan, turşu kültürüne lezzet zenginliği katan da işte bu tercihlerdir. Türk sinemasının sevilen eserlerinden Neşeli Günler filminde de bu duruma mizahi bir açıdan bakılır ve turşunun limonla mı yoksa sirkeyle mi yapılması gerektiğine dair durmaksızın tartışan bir ailenin hikayesi izleyiciye sunulur.
Çubuk turşusu sanıldığının aksine sadece salatalıktan yapılmaz. En bilinen ve en çok sevilen Çubuk turşusu türü salatalık olsa da; fasulye, lahana, biber, kelek, pancar, armut, koruk, karnabahar gibi meyve sebzelerden de Çubuk turşusu kurulur.
2004 yılından beri her sene genellikle Eylül ayında ve dört gün süreyle Çubuk Turşu Festivali yapılır. Her sene festival komitesi festival için bir ana tema belirler ve festival boyunca açılan stantlarda çeşit çeşit turşular ziyaretçilere sunulur, bu lezzet ile tanışmaları sağlanır.
